About Kookaburra Cookies
Hi there! It’s Eli Vedral here—baker, owner, and founder of Kookaburra Cookies.
The idea for Kookaburra Cookies first came to me as a teenager while studying abroad and working at a restaurant in Sydney, Australia. One of my favorite things to do was try hole-in-the-wall restaurants and unique dessert shops. I was shocked at how popular food fusion (or the combining of foods that do not traditionally go together) was in the land down under. It completely changed the way I thought about food, and about baking.
I returned to the States and launched Kookaburra Cookies soon after. My business revolves around the concept of "strumble." Strumble™ is my riff on the streusel-y, crumble-y topping you often find on muffins, cakes, and breads. I took it, upgraded it, and fused it with my favorite dessert: cookies!
I named my business after the the Kookaburra—an iconic bird native to Australia—because they are known for spreading joy and making people smile. I want to channel that same energy through my cookies.
I develop (and continue to develop) all of Kookaburra’s recipes from scratch myself. My cookies are just how I like ‘em. They’re soft-baked, jam-packed with unique flavors and textures, and balanced with a hint of salt. Even after more than three years, my top-secret recipes are still constantly being tweaked.
I am also currently a student-athlete at Creighton University in Omaha, Nebraska. In addition to running on the cross-country and track teams, I am majoring in graphic design. When I’m not running, baking, or studying, I’m probably playing (or watching) sports, reading Game of Thrones, or taking a nap...
While Kookaburra is currently based out of my home kitchen, I hope to open a brick-and-mortar location after graduation. Be on the look out!
